Organic Spelt Sourdough
This winter, we are excited to introduce a 100% organic spelt sourdough loaf, made with Biodynamic spelt grains from Milmore Downs in North Canterbury. The wholemeal flour is milled from 100% of the grain, keeping all the nutritional value in the flour. We add a mix of kibbled spelt and flakes to give a textural bite to the loaf.
Spelt – Dinkel in German – is an ancient grain related to wheat that has been grown in Europe for millennia. It is widely known for its digestibility and pleasant nutty taste.
With a twenty two hour fermentation, our sourdough process allows most of the gluten to be pre-digested. The combination of this process and the wholewheat flour make this a super digestible, nutrient dense loaf.
Delicious as is, with butter, toasted for breakfast… you name it.
This loaf will be available from June 1st until August 31st.
