Hot cross bun and butter pudding with fruit

Too many hot cross buns? Why not make a pudding?

We know stale hot cross buns are not something often seen, but we reckon this dessert is well worth allowing some to get old!

Here is our recipe (for 2 hungry people):

  • 3 stale hot cross buns, sliced into 3 through the middle
  • Softened butter
  • 1 cup full fat milk or a mixture cream and milk
  • 2 large eggs
  • 40-50g sugar
  • Optional: vanilla essence, orange zest

Alice’s note: I like to prepare everything the night before to serve it for breakfast. This way the buns have time to soak up the liquid and it’s faster in the morning 😉

Butter an ovenproof dish. Slice the hot cross buns through the middle and butter generously. Place in the dish.
Whisk together milk, cream, sugar, eggs and flavouring if using. Pour over hot cross buns and press down. Cover and leave in fridge overnight.
First thing the next day, turn your oven on 180°C. Bake for about 25 minutes, checking towards the end that the top doesn’t burn (although some brown bits are necessary for texture and flavour!).

Serve warm with your favourite fruit and some whipped cream.
